There is an overall demand for all things plant-based and wines will be no different. Eco-conscious and ethically minded consumers (many millennials) are flocking to vegan, organic and biodynamic offerings versus traditionally produced wines. Biodynamic wines are produced with holistic agricultural methods and minimal intervention post-harvest. Organic wines typically do not use herbicides, pesticides or other chemicals found in traditional farming.

In 2019, wines with alternative aging methods will rise in popularity. Younger, juicier wines ready for drinking upon purchase will see a massive surge in demand. While top varietals served in the US last year were Chardonnay and Cabernet, in 2019 many wine drinkers will look for new varietals to explore from lesser-known regions and indigenous varietals. In particular, younger wine drinkers are increasingly turning to exotic imports from Italy, France and New Zealand. Providing an unusual varietal as a wine by the glass is an excellent way to satisfy customer curiosity and stay on trend.

US wines that are reaching prime maturity and begging to be opened in 2019 range from 2006-2012.
